A Question of Supplies. Tue, 11/20/12 4:40 PM (permalink)
For those of you who own/operate a food truck, do you use a supplier like Flemming Foods or Sysco or do you purchase your supplies at a wholesale club like Sam's, Costco, or BJ's?

May have to use a mixture of both due to a)one supplier not having everything you need or b) another place having the same product for cheaper

But the sad part is some suppliers will change the grade of the product you have been buying for 4 or 5 years. Or they may just choose to no longer carry the product. And when those kind of things happen you have to scramble to find your product again or a good substitute.

It is at this very moment my biggest headache and I may have to take two items off my menu because of Sam's Club and their inconsistency.

I also buy from another supplier but at least one of the Sam's Clubs items is made for them (Sam's Club) . So it's not available anywhere else. And though not a big seller it's a special item that some of my customers really like. It sucks! LOL

Just when you think you're set someone decides to change things up just to keep you busy, happens every year. Last year I found 4 sizes of cups with the same lid then they change them. It was nice while it lasted.

Ice Cream Man you take it very well. Me not so well. Makes me madder than hell that suppliers seem to not care about our loyalty to products. And speaking of cups and lids their prices have shot up. Most vendors just starting in this business don't think about the time wasted searching for the right product and the expense of buying the paper goods we go through annually.  We need one of those red buttons, "That was easy". LOL

One year the major cone manufacturer decided they weren't going to make the main size of cone we use, our whole business model is based on that cone. Was I pissed, YES, we found another cone close to the size but it tasted like cardboard.  It took 3 years to find someone who solved the problem for us. That's like taking your best bun away and you know how hard it is to find that perfect bun to go with your food. If you're small you better be prepared to shop many places and always have a back up plan.
I always think, I spend 150,000 in 6 months, if I could spend that in one place I could save time, hassle and money but it never works.

You're gonna wanna keep you're eyes open for better suppliers.
Last week I discovered my local corner market had my favorite HD buns for 50 cents cheaper than where I was getting them. Then yesterday they were gone and replaced with a different brand that was 50 cents more expensive.
I believe in buying local and try and avoid Wal-mart, etc. If you do a decent volume you may find small local business's that will work with you.

I also used their products but now Sara Lee is trying to fill that gap. Be on the look out for Red Top buns. They are pretty much an equal to what you were buying and only a few cents more.
