Beef tongue - Fri, 12/28/12 2:56 PM

I was in the supermarket this am and I spotted a smoked beef tongue.  I haven't seen one in a long time.  I picked it up to check the price - $40.00!!  I put it back and continued on my way.

I love it pickled and sliced for sandwiches -- on rye with Swiss cheese and Batampte mustard.

I like to smoke a beef tongue on the Big Green Egg.  Just peel the membrane first.

I grew up on beef tongue and still love it dearly but it very difficult to find it cooked, in delis, in Ohio - Jungle Jim's carries it in the Cinci area, uncooked and only one deli in Cinci sells it ready to eat, http://www.marinasdeli.com/  - it comes to them from NY.

Some real Mexican taquerias offer it also, normally in burritos.

The big negative with beef tongue is that it is very high in fat content.

No tongue will grace the grills of my Big Green Egg.

No respectable deli tray would neglect tongue.  A staple at shivas my whole life.

We used to have tongue on the deli trays at shivas.

Now most do Costco shivas platters.

I'd love to try it, but I don't want to cook it myself, and I haven't found any place in the area that prepares it.

I LOVE it but can only get it when my sister and I split 1 of her steers. They raise it, we go halves and I get the tongue..

Ohhhhhhhhhhhhhhh  my favorite, but I haven't bought a store bought one in 10 years easily.

You might check with an international deli there - we have one here that sells it - they sell mainly Jewish deli items  but other items too and most of their stuff is from Eastern Europe.  It is the only place in Cincinnati I know of selling deli tongue.  It comes to them from NYC or Chicago.

I ate tongue when I lived in the north of France.  They made it in a Madeira sauce.  The best preparation is La Langue Lucullus de Valenciennes which is layers of smoked tongue and layers of duck foie gras.  Named after the Roman general Lucullus who was a gastronome.   It is divine.

Just reminds me of a 2nd Avenue Deli story:
A man walks in for breakffast, and asks what the special is.
"Smoked calf's tongue!" replies the waiter.
"Smoked calf's tongue?" exclaims the man. "I don't want to eat anything that came out of a calf's mouth! Just give me a couple of fried egsgs."
