Hash Brown Recipe With Spam

2 Large Baking Potatoes
1 can Spam
3 Egg Whites
Turmeric
Cayenne Pepper
Soy Sauce
Butter 
Vegetable Oil
Salt and pepper
 
 
Bake potatoes in 450 oven with skin on dry until done but still firm approx 40 minutes. Set aside and let come to room temp. This can be done night before. Just make sure potatoes are room temp of cold. 
 
Dice entire can of Spam in 1/2 inch squares and saute in separate non stick skillet with 1 tablespoon soy sauce. 
 
While spam is cooking dice potatoes to 1/2 inch to 3/4 inch size including skin. Put in medium high non stick skillet with 2 tablespoons vegetable oil  and spread out flat. 
 
When potatoes have browned on side one sprinkle 1 1/2 teaspoons turmeric and cayenne pepper to taste and mix in and flatten out.
 
Once spam has browned dump on top of potatoes and mix in. 
 
Cook mixture until crispy on outside but tender.
 
Mix three egg whites in small bowl and add salt, pepper, cayenne to taste, 1/4 tsp turmeric and a splash of water. 
Add small pat of butter to empty Spam skillet and melt. Add egg mixture and cook until done flipping once.
 
Salt potatoes mixture to taste and top with egg.

    I suppose it might be better than the lutefisk hash browns.

    Baking Potatoes I have found to be the best way to make hash browns. If you have never tried this method I strongly recommend it. The Turmeric  adds little flavor but give the potatoes a great color. You could add peppers and onions also....Russ

    Thats how i make my hasbrowns-when we are having baked potatoes, I always make a few extra just for the purpose of fried potatoes.

    Not to nit-pick, but I always thought Hash Browns were grated spuds, fried crispy on one side then flipped and browned again. Maybe it's a regional thing.
    And what have you got against egg yolks?....I mean you're using Spam so it can't be a health thing. I do like the turmeric thing tho.

    Its a regional thing. I agree with you on the shredded ones as that's what I always called them. While the others were just called home fries. The lack of egg yolks was because my son does not like them. I posted it as I made it.

    I tried them after someone on this site told me that Waffle House used freeze dried also...Russ

    The baking potato as more starch in it than some of the other taters, so it fluffs and makes good mashed taters too.
     
    Stroud's in KC use Baking taters for their mashed taters, and they are YUMMMMMY.  I too have a secret love of only this type of SPAM.  Maybe I am part Hawaiian

    What Russ is making I would call "SPAM Hash', Like Corned Beef Hash but using SPAM.
    To me, Hash Browns consist of potatoes and a little onion only, no meat.
    Guess it doesn't matter what you call it as long as it tastes good!
