I eat it however it's served but prefer it on the lean side.
My uncle loudly announces that he'd like his with full fat.

I like mine just like this...........
The BEST Deli sandwich I have ever eaten!  This is the smaller of them!
The homemade all ya can eat garlic pickles are the bomb!

I like my corned beef fatty, but my pastrami lean. Most places around here only serve either lean though, and they don't make it in-house.

Cavandre, that figure is bogus. Someone's been vandalizing the polls the past few weeks, stuffing the ballot box with their particular choice.

 
I bet you'd find more folks that enjoy Cod Cakes, Baked Beans and Brown Bread...The diners and taverns in the working class suburbs and neighborhoods of Boston are full of them...

Mar, I hear there's decent NY style corned beef in SoCal, but I haven't found any in the SF Bay Area. 

Between Langer's, Brent's and Katella Delis for the Jewish style and Johnnie's Pastrami and The Hat for dipped sandwiches, we do not lack for good pastrami in SoCal.
 
I can see the meat slicer's union packing the ballot box though------pastrami makes much more of a mess!

BTW, Kenny & Zuke's in Portland makes an acclaimed pastrami, but I doubt they   
appreciate calling it NY style. Probably Portland style would do.

I think Langer's serves New York style... hand sliced and thick.  I think a sandwich runs $14 or more.
 
Johnny's thinly slices, steams/boils and piles it on.  It's around the corner from Tito's so I don't get there much.

That's a beautiful picture!
No offense intended, but I'm making a distinction between what I can get my part of CA--which is often made with eye round instead of brisket--vs. what you can get in NY at places like Carnegie (see photo above by iluvcfood), hence "NY style."  Ours lacks the flavor and juiciness, and totally falls short of what you can get back east (or maybe Portland).  There's a place near me that makes its own pastrami, and it's interesting, but not traditional NY deli style, which I miss.

I live in the very far edge of the Chicago burbs...... I don't ever see either corned beef or pastrami like that. There used to be a local place that served fantastic corned beef sandwiches but now long gone. Buddig anyone?

I like Buddig ham, my grandmother would make me sandwiches with that all throughout elementary school. I don't eat it very often, but still like it. Never tried their corned beef or pastrami, might have to now.

Not using Brisket for Pastrami/Corned Beef is akin to using tofu to make Burgers. Eye of the Round Pastrami, LOL!

I love pastrami lox! I also love fatty pastrami and corned beef. I guess that's why I rarely have them!

Langer's pastrami served on the freshest rye bread I've had.  I hear that the rye is started elsewhere and finished off at Langer's but of course that is hearsay.

It's not just the thick hand cut slices... it's the flavor and dark crusty bits that makes Langer's pastrami sandwich stand out.
 
Today's sandwich was quite fatty... and delicious.
