This Recipe sounds good!
Louisiana Crawfish Hash
       // //

 
Crawfish hash with poached eggs and a Hollandaise sauce. Makes 2 servings
Courtesy of: Louisiana Cookin
Recipe Ingredients: 
2 tablespoons extra-virgin olive oil
3/4 cup green bell pepper, diced small
3/4 cup onion, diced small
1 tablespoon garlic, finely diced
2 tablespoons Creole seasoning
1 pound 2 ounces russet (Brabant) potatoes, diced, blanched, and fried
6 ounces Louisiana crawfish tails, fresh
2 each green onion, green part only, bias cut
4 eggs, poached
6 ounces Hollandaise Sauce, recipe follows
Hollandaise Sauce
2 teaspoons fresh lemon juice
4 tablespoons boiling water
3 large egg yolks
1/2 cup unsalted butter
1/4 teaspoon cayenne
1/2 teaspoon salt
Recipe Directions: 
Heat oil in a 10-inch sauté pan, add the bell peppers, onions, and garlic and cook until translucent. Add the Creole seasoning and fried potatoes. Let the hash cook for 1 minute and then add the crawfish and the green onions; continue to cook until the crawfish meat is hot and then place in serving bowls. Top each portion with 2 poached eggs and each egg with Hollandaise sauce.
Hollandaise Sauce
Melt the butter and keep it warm. Heat the lemon juice until just warmed. Have small saucepan with boiling water and a measuring tablespoon ready. Place the top of a double boiler over (not in) hot water (this means the bottom of the top of the double boiler should not make contact with the water heating in the bottom half of the double boiler). Place the egg yolks in the top of the double boiler and whisk until they begin to thicken. Now add 1 tablespoon of the boiling water. Continue to beat the sauce until it begins to thicken. Repeat with the remaining water, 1 tablespoon at a time, beating the mixture after each addition. Now add the lemon juice. Remove the double boiler from the heat. Beat the sauce briskly with a wire whisk. Continue to beat the mixture as you slowly pour in the melted butter. Add the salt and cayenne to taste, and beat the sauce until it is thick. Serve immediately.

I love Popeye's fried chicken too and am so glad we don't have one right around the corner! I love when they have the fried crawfish! so good!

I had a shrimp po boy from Popeye's once. It was pretty good, except for the roll. Popeye's red beans and rice was really good.

We are down in South Padre Island, Texas eating seafood like crazy this week. We may head over to Louisiana at the end of the month and feast again in Lafayette and Abbeville.

I fully subscribe to the "The colder the water, the better the seafood" theory so I'll take what is coming from the Maritimes/New England waters before the Gulf.
 
Not that what they produced down yonder is sub par by any means.

Robin's and Pat's Fisherman's Wharf ( both in Henderson) are hard to beat. Also it's not just the seafood but the way they cook it.

And, Ann: I have a Popeye's less than one mile from my house. I usually print out a Popeye's coupon online which allows 5 pieces, 2 sides and four biscuits for $6.99.
I always order spicy thighs only (the spicy contains much less sodium, too). The girls there know me so they always give me 6 pieces with my coupon and a large tub of cole slaw. I have them hold the biscuits though because that's the last thing I need to be eating. I make 3 meals out of that deal. Triple yummo!

I know y'all are trying to have a little fun but a Popeye's 12 piece is not seafood and no longer Louisiana anything. it is now an Atlanta company. I thought this thread was to promote Louisiana seafood.

We are in New Mexico right now 19 days into our current 2 month RV trip and it is looking more and more likely for a visit to Lafayette and Abbeville, Louisiana in early April. Can't wait.

Davydd - the Steen's family in Abbeville make some great products including molasses, cane syrup, and cane vinegar.  They now sell a glaze.  They're not open for tours, but some of the grocery stores in that area should carry their products.  I especially like the cane vinegar, I don't taste any special sweetness to it, it's just less acidic, and mellower - good for potato salad, egg salad, etc.
