Must be nice if someone just gives you 80 lbs of prime meat. Why do some bow down to this guy as if he is some sort of new age guru?

I wet aged a whole NY strip, all I had to do was to leave it in the cryo-vac package for 2 weeks in a fridge by itself, when I opened it there was no foul smell and the steak was as tender as filet mignon, flavor wasn't too overpowering either, I want to try it with grass fed beef to see if there's a difference.

Your opinion and I respect that. It is however not mine. As for the dry aging a few white towels and your refridgerator will do the trick.
