Nice.   I'm anxiously awaiting the opening of an Al's in San Jose, CA, which was supposed to open THREE MONTHS AGO, but is still dealing with the permit process.  Ugh.

Be careful what you wish for as Hot Dog University will be offering classes in California on July 15 & 16 at our west coast campus in Vernon.

I have been eating Italian Beef's, mostly from Portillos but many others, since that late 1960's. I love juicy messy dipped beefs. I have never used the "stance". First of all, I sit at a table. I'll roll up my sleeves and put down some napkins in front of me but other than that, I have no trouble eating the messiest falling apart beef, neatly. Except for my hands! I go through about 20 napkins.

I'm so glad they explained who those people were.
 
Makes me hungry. CSD, do you remember Fon Tan Blu in Kenosha? They used to serve just the bun dunked in the juice. 80 cents, they called it a soakie. They also served Fanta Red Creme Soda.

Portillos will sell you a dipped bun with or without hot peppers but sans meat.

Each of us has a different physique. For me, with no neck, short arms, and a pot belly, the stance is the only way to eat a wet or soaked Italian beef.

I remember the Fon Tan Blue and the soakies. We offer Fanta red creme soda as a self serve fountain drink at the Vienna Beef Factory Cafe'.

I love Italian beef. Extremely easy! Changes for our tastes were: We like spicy foods so I added another half jar of pepperoncinis--juice and all. Add all peppers in half way thru the cooking process: after about 3-4 hours so the flavor soaked into beef. Use 2 instead of 3 dressing mixes. Brushed the hoagies very lightly with olive oil, sprinkled a bit of garlic powder & salt on them, toasted then added shredded meat and provolone & broiled until melted--(toasting the hoagies helped prevent them from getting too soggier when juice was poured over them). Put the hoagies in a bowl, added pepperoncinis to taste and ladled the unbelievable great juice over it. Excellent!!! I did go to great lengths after the meat was done to pull it out and shred it to make sure all the fat was removed and this took a LONG time. But this is not necessary just my preference.
