Today's front page review of Isaiah's Restaurant - Montgomery, AL features a picture of brown (dried) black eyed peas.   How come everyone doesn't know that the best black eyed peas are picked GREEN and eaten fresh or frozen, not dried and reconstituted.   

Green Black Eyed peas are wonderful in flavor and texture.  Dried peas are mealy and not worth eating.
Just wish you could find stores that carried them fresh or green frozen.

I could be wrong, but those look like purple hull beans to me.

They were listed on the menu as field peas. 

(my sheet was on the right)  And they were delicious!

Jman's correct. The peas in the picture are purple hull peas. Field peas are a deeper brown and usually don't have an eye. All of them are extremely yummy, when prepared the right way. My grandmother served us all of them, at one time or another, but purple hull are my favourites. Looks like I've got a reason to stop in Montgomery next time I'm in that area.

What in the Hell?
Don't tell the good people of South Carolina that or you'll be hunted down and took out. Hoppin John is one of the great contributions from the citizens of that state to our nation's culinary canon.
 
Ingredients:
2 lbs Blackeye Peas
3 lbs Ribs, Pork, Country Style, smoked, roughly chopped
5 qts Pork Stock [ http://www.scrumptiouschef.com/food/index.cfm/2010/3/4/ ]
1 each Garlic, bulb, minced
1 bunch Celery, minced
1 bunch Green Onions, giant, minced
6 each Peppers, Poblano, chopped
1 can Tomatoes, 12 oz, whole, peeled
2 T. Fat, bacon,clarified
Salt
Pepper
Method Part 1:
* Bring pork stock to boil in large kettle, add blackeyes, cook 2 hours at medium heat
* Heat fat on medium high in separate vessel
* Add Peppers and Green Onions,cook 15 minutes
* Add Celery cook 15 minutes
* Add Garlic and Pork, cook 10 minutes more
* Add Tomatoes, cook 30 minutes
Method Part 2:
* Add vegetables[ peppers,onions,garlic,celery,tomatoes ] to kettle of blackeye peas
* Simmer for one hour
* Adjust flavors with salt and pepper

Kroger Co. offers green frozen black eyed peas in some stores.  (I have a 12 oz. bag of them in my freezer right now.)
