My mom was a master at ruining a roast. Cooked to death- like leather -couldn't cut it with a chain saw!

My mother should've been arrested for crimes against pork, but in all fairness her generation was taught (and not without reason) that pork needed to be very thoroughly cooked.  Thankfully this is no longer the case!

I never had a bad meal growing up.  My mother, grandmother, grandfather and great-grandmother were all excellent cooks and bakers.

As a kid, my otherwise dearly beloved aunt was determined to make sure I would learn to love Lima beans and cranberries.
Every visit to her house, the meal was sure to include one or the other, gratefully never together !

Today I still abhor the thought of Limas, but love cranberries, in a VERY different recipe.

Meatloaf - My mom was a good cook, but I hated her meatloaf.  It was always dry, no gravy or glaze on it, and she would add chopped onion, celery, and garlic to the mix, which are good, but they never cooked through, so you ended up with a raw, crunchy texture that I didn't like.

When I was growing up, my Mother was a pretty good cook. There just wasn't a whole lot of good-for-you foods that I liked. My Dad's rule was that if you put it on your plate, you ate it, so there was a lot that I passed on.
 
  I will share the very first meal my bride served me: a slice of spam, canned green beans that were just heated up, hominy, and a slice of white bread and a glass of something she called tea.  During the four years we were married, it didn't really get much better.  Maybe that's why I was so skinny.

To this very day I have NEVER tasted anyones meatloaf that was better then my Moms.......(my Wifes however comes VERY close)
When Mom cooked Liver which my Dad loved..........  I wouldnt eat dinner that night!  YUCK!  Liver and anything associated with liver like Liverwurst to this day almost makes me vomit!

I know the feeling well!  My first Wife couldnt even boil water correctly let alone serve a good meal!

My Mother was a fantastic cook. However she experimented once with leftover Easter ham. She decided to make a salad-cubed ham, green onions, celery, and leftover Easter eggs chopped up. Mixed with mayo. Just did not work for me, at all.

Norwegian mother, so (hands down) fiskeboller was, for me, the worst. Thankfully, she didn't care for lutefisk or gammelost!

My dear Slovak mother is a fantastic cook, but there is one thing that I can't stand. It is her sauerkraut soup. It smells up the entire house for days, and smells like old gym socks. Ugh!

My Mom was also a great cook and knew how to use up leftovers very creatively. The one meal we had when I was a child that I really cringed at was fish cakes from our local fish market. We had them at least one Friday a month. I don't even think my Mom thought they were that great but my Dad loved them. My siblings and I were very grateful when they came out with those flavored ketchups in the late sixties. Our favorites were the pizza flavored and the hickory flavored. I would douse those fish cakes with the pizza ketchup!

Alas, Mater grew up with a silver spoon in her mouth and a maid in the kitchen, so she never really learned to cook well, despite buying hundreds of cookbooks and subscribing to several excellent magazines.  Nor did she have a big appetite. She was able "to get by" on most meals...but I do remember one meal my sophomore year of college....came home to two 1/4 inch slices of ham, each about the size of a half dollar that seemed to have been cooked about 3 days along with 2-3 TBS of peas that must have been left over from before I went off to college, and some mash potato "mix" that reminded me of kindergarten paste.  I have to admit that after that meal, I was actually longing for college refectory meals.
 
Actually tho.....her codfish cakes, although probably soaked in lard or oil to be cooked, were quite tasty.at least the coating. The bake beans that all good Brahmins had with them came out of a can, along with the brown bread

My mom was an awesome cook, but if I had to pick on some things, it would be her Spanish Rice. I think Spanish Rice should have a little bite to it. My mom's kind of leaned towards the Italian side. Tasted too much like spaghetti sauce in my opinion.
 
We had fried kielbasa too often also. I like it, but my dad loved it if you catch my drift.
