I'd like to make a lid for my fryer. What gasket material should I use?

Silicone rubber cord something like this:

Use a U channel that is shorter than the diameter of the cord and slightly narrower than the diameter.  So when you fit the cord into the channel its an interference fit and the cord is exposed on the top to squeeze against the mating surface.  Using a channel allows you to remove the gasket easily for cleaning.
