Take home fried chicken-the NEXT day

True story: I was living in another town with my 2 small kids.  DH was in the Navy at the time & out on a deployment.  Went out to a local fried chicken chain/caterer.  They'd had a wedding cancel-out their catering order & were selling ALL chicken items as BOGO.  I felt "Bummer" because between the 3 of us we couldn't EAT that much chicken.  The gal behind the counter gave me the BESTEST. TIP. EVER.  Get the BOGO chicken & enjoy fried chicken tonight.  Tomorrow night (or the next.....IF IT LASTS THAT LONG!) put 1/2 bottle any kind of BBQ Sauce in a bowl.  Whisk in (almost) the same amount of......LEMON JUICE.  Coat your chicken pieces & place 'em on a foil lined cookiew sheet/baking pan.  Re-heat in a 350 degree oven for about 20 min.  (Keep an eye on it, it's done when the BBQ sauce bubbles around the chicken.)  Can also be re-heated on the grill....but that's not necessary.
The lemon juice CUTS the grease & coats the crispy skin.....making the BEST. BBQ CHICKEN. EVER.

    I've done this, and it works pretty well.
     
    Another good way of re-using cold fried chicken: re-fry it.   2-3 minutes in 350 degree oil, and you get some fantastically crispy chicken.  Seems to work best with Popeye's Spicy chicken.

    I tried the fry fry again...using a local fast food fried chicken (Chicken Holiday) and it was really good!

    Very interesting.  I think the chicken question at the end deserves a answer.  "Why not twice fry all chicken"?  I know French fries are better when I do that.  I had never thought about chicken being twice fried.

    As for re-frying chicken... If you are going to the trouble of heating a pan of grease, why buy to-go chicken/ Fry it at home.

    We order a 50 ct. pkg. for family events....in the summer.

    I usually get the leftover chicken...never the ribs.

    I'm just not a chicken fryer...in the first place. Second place only.

    The elephant in the room:  Leftover fried chicken:  Eaten cold?   Any takers besides me?
    Cold fried chicken changes in it's flavor profile and texture, and is a taste I enjoy.  When the chicken fat and grease congeal, it imparts a great taste and texture.

    We usually gently reheat it on a wire rack in the oven, maybe 300F or take it off the bone, chop the meat with a little of the crispy skin and use it in stir fry.

    Great ideas for mixing things up a bit with leftover fried chicken. I love the idea of mixing up some sort of sauce and placing it in the oven. Absolutely Delish!

       On Saturday night we fried up a bunch of chicken thighs. I brined them overnight in butter milk and salt.
       We made (4) types of fried chicken: cinnamon, garlic salt and pepper, garlic powder and pepper and Symeon's Greek seasonings. Of course we ate some but the majority went right into the fridge. It's not April fool's, right?
       The following evening we took the chicken directly out of the fridge and refried it @ 350 for (3) minutes. R U Kidding me? Outstanding and I mean outstanding.
       The skin was noticeably crispier, the meat just as moist and the flavors of the spices more profound. Killer recipe.
       I served (8) people who very much enjoyed the chicken and some said it was the best they ever hd. But for the cook, what a dividend. All the PIA stuff was done the day before. I stood in front of the fryer taking orders for chicken, fries and onion rings. (3) minutes and then to the cooling rack. While cooling, fries and onion rings are done and dinner is ready.
       This will be my technique going forward. I can actually refry my chicken for my guests and socialize. And get this. Refried is done in (3) minutes, fried (22) minutes. And all the hassles of prepping and frying chicken is yesterdays news.

    Excellent points euclid! i'm glad to hear that it works so well on homemade chicken!

    I'm gonna give it a fry using Albertson's fried chicken next week.

    Just hit me, this fried chicken was some pretty good stuff at the restaurant!  I should have named it:
     
    Pollard's Chicken in Norfolk, VA. (but that was over a decade ago!) They were VERY popular & I can't imagine that they're not around anymore?

    I like mine cold right out of the fridge the next day with bread & butter pickles. Or, some pickled red peppers. A little acid cuts through the grease.

    Unfortunately "gluten-free flour" is NOT a fry-able product (soy or garbanzo bean, almond and similar 'flour' have a much lower fry-point & the coating will be burned long before the chicken is fried) :(
     
    I have been tempted to cheat....but that only makes me ill later on. :(

    Try recipes that use corn meal or corn flour or a combination. Makes great fried chicken. Had some outstanding fried chicken recently at Zingerman's Roadhouse in Ann Arbor Michigan.

    I haven't tried it, but the Countryside restaurant in Roseville, Minnesota sells rice-flour breaded broasted chicken as a gluten-free option.

    I always have their regular broasted chicken, and it is quite good, both initially and cold the next day. My brother tried the walleye coated in rice flour (he's not gluten sensitive, but that was the only way they were serving walleye that day) and he enjoyed it.

    Chicken fried is very good especially it fried more than one time, the time it fried eat at that time you feel the crunches and taste also and I love spice chicken with lemon and of course with onion. Yummy!!!

    The chicken fried up nice and crispy, the flavor of the meat was delicious, and the directions were very easy to follow. The House Seasoning directions must have a typo in the amount of salt to put in the recipe. Holy smokes! We had to take the skin off to enjoy it, which is kind of a bummer when crispy fried chicken was the highlight tonight. I want to make this again but need suggestions for the amount of salt to use.

    Whenever I heard chicken curry or chicken fry my mouth get start watering my mom she make chicken fry, but we are not using coconut oil instead of coconut oil my mom she used something else and rest of all thing are the same surely I am going to follow your procedure and I let you know and to fry the chicken I think hardly it will take 3 minute to become crispy.

    We have a really good food truck here in Columbus that serves fried chicken (Mya's) and I'm pretty sure that they do the double frying technique.  I think they fry a bunch all at once and then when you place an order it goes back in the fryer for a couple of minutes.  It comes out great every time.

    I make General Tso with left over like someone said and it works great. You can also add it to cream of corn or cream of chicken soup and place it on the leftover biscuits. It makes great chicken salad, chicken quesadillas, or rolled tacos....Russ
