    When I was in Italy, you would walk into shops there and they would have these jars at the counter with some sort of meat in it, I tried it once and it was really good. I later found out it is raw Horse meat that soaked in like lemon juice and vinegar or something like that which creates a chemical reaction and more or less cooks it, without cooking it. I forget now what they called it, but it was good and I never knew I was eating Horse.

      When I lived in France and Belgium (late 70s) there were special shops that sold only horse meat, called "Chevaline".  I really liked it and ate it often.

        If you do it with fish, it's called "cerviche".

          During War Two there was a lot of horsemeat available here in the U.S. I like it.
           
          Besides, what else is a dumb horse good for?

            When I was a teenager, my favorite cheesesteak shop was shut down for selling horsemeat so I guess I like it as well.

              Jack in the box used to serve kangaroo until people freaked out. cows are beautiful. use the lowly kangaroo.

                It's like everything else in this system. Maybe horses produce more rapidly than cows and would cost less per lb. and eating horse meat would be bad for the beef industry. Who can say? Maybe it would cost more but perhaps people would like it better and drive down the price of beef.

                    I can remember a horse meat market in Springfield Ma during WWII
                    No ration coupons needed
                    My dad and I liked it
                    The steakes were very good
                    My mother and sister would not touch
                    I suppose I have given my age away
