You are on!..We have to meet halfway.  So that would be somewhere in Kentucky, I guess so we can have 2 types of BBQ and still one....and most likely only one!...........set of stuffers!...............OK.2.depending on if you like linguica in them or want them spicey before adding melted butter and hot sauce

Sounds good. I'll take the stuffed clams anyway you have them prepared. However, I believe It's illegal to transport Texas smoked beef brisket to the state of Kentucky. They consider it an illegal substance and I understand the Kentucky State Police will confiscate any Texas BBQ brisket they find. They supposedly have special BBQ sniffing dogs trained for just that purpose. I was told, they "hold it for evidence". Can you believe that?

This joint is a total home run! 
 
The genteel Mrs. Metro used a knife and fork on her beef rib and I got to gnaw on the bone.  It was simply magnificent. 
 
For my part I enjoyed the best pork ribs I have ever had anywhere.  OMG good!  On the side I had a smoked, loaded baked potato which was every bit as good as it sounds.
 
As a matter of fact, everything on the menu is smoked or has an element of smoke in it.  Even our dessert - chocolate meringue pie - used 'que drippings as shortening for the crust.  It was wonderful.

Re: the pitcam - even though he's a real deal chef (he beat Morimoto like a rented mule on Iron Chef), Love is also quite the showman as a restauranteur.
 
The Woodshed is pretty much just that - constructed largely from steel and wood framing corrugated, galvanized steel sheets.  And, it is not air conditioned!  
 
Would this present an issue on a 101 degree afternoon?  NO!  The interior was comfortably coooled by industrial-sized ceiling fans and misters; in fact, it was far more comfortable than "standard AC".  Even the open air courtyard was well populated with diners enjoying the comfort of umbrellas, the giant fans, and misters.  Huge kudos to the architect and the HVAC engineers.  Wonderful!  The ambiance certainly augmented the food experience.
