here is a link to some burners and descriptions. Note each one give the 'optimum' distance from top of burner to bottom of the heated surface. Most 'high heat', 'high pressure' burners are 3" to about 5" and the flame is usually straight up. ... Low pressure burners with lower clearance, the flame is usually horizontal and the burner has a small 'lip/flange' just above the flame. The burner listed as 'LPCAST' (abt 10 or 11th down) is the type generally used on most Hotdog carts and requires 4" clearance to bottom of pans.
