There's a great little Russian-American restaurant that serves excellent borscht just on the edge of Newport TN.  A place you would least expect it is literally a ma & pa restaurant run by 2 former circus performers from Russia.

I'll make a pot of it once or twice during the winter, when I want something a little different than a standard soup or stew. Great on a cold day.

I only had it once at Jake's Deli in Milwaukee.  Great corn beef but the soup???  Not so much.

Google Mrs. Kostyra's Borscht.

She's Martha Stewart's late Mom.  Martha doesn't post bad recipes.

If you can't find it, I have it saved.  I just don't know the ins and outs of copyright laws.

Try to find Citric Acid instead of lemon juice.  My mother used to buy it under the name of Sour Salt.

Mar, With reference to my above post, I do remember my Aunt Nelly used "sour salt" when maker her borscht. I wish I had the recipe. But my (Russian) mom and all her 11 siblings are gone know.

For those of you who might come to Dallas or are in or near Dallas, we have an excellent Russian owned Jewish deli named Deli-News. They make a Russian Jewish sweet & sour borscht very similar to what my late aunt Nelly made. When I have it there, it brings back very warm memories.

I'm sorry. I feel your pain as I've been there with my own late mom.

Thanks and Hugs.

When I say she doesn't remember anything that's not true.  She doesn't remember a lot of things, recipes or even that she ever made some things are some of them.

Sorry about your mom.

I'll be with mine tomorrow.

Yeah, Paul

it's Grill 73.  Go thru Newport on Route 25, and just past the Van Camp/ Stokeley factory  abut 1/2 mile is rt 73.  You can only go right, and it's down about a mile.  Can't miss it.

Used to be a great place down here called Sasha's for all sorts of Russian and Polish stuff. They sold some really great borscht, like the Manishevit's we used to get in Chicago.Sadly the quality of their service was such that people began voting with their wallets and now they are gone.

Yeah, unfortunately, Russians have never been known to be the warmest of people.

When I worked for a Ukrainian woman in Alaska, we would make borscht every week. Seems like we put just about everything we could think of in it including but not limited to, beets, onions, pork, beef, chicken, parsley, dill, turnips, potatoes, carrots, cabbage, celery, whatever... I'm not sure if this is a traditional Russian borscht but it sure was good and great on those long dark winter Alaskan days.

That's my favorite borscht. More like a stew. When Bourdain did his first Russia episode that's the kind he had.
