We ate at the Strouds Old Manor earlier this week and while everything was cooked perfectly
I could not detect even a hint of seasoning on the chicken.

I mean zero- not even any salt & pepper.

Is this normal or did the cook forget something?

Ummm sounds like they forgot something

Usually it has a nice peppery crust

This is sad that their chicken wasnt up to their normal standards.

Thanks, I will try it again when I go through KC next time.

Luckily, Bon Ton Mini Mart was on their game a couple days later.

CK, I respectfully disagree. One of my few complaints about Stroud's is that I also find their "crust" to be a little lacking in flavor. I have discussed this with buffetbuster on a few occasions, as well.

Don't get me wrong....I love their chicken, but I would agree that it is not well-seasoned prior to frying.

It happens.

As a Stroud's customer of many years, and also as someone who has worked in the restaurant business for 40 years, I can say with relative confidence they didn't "forget" the seasoning on your one order of chicken.

I'm not saying they didn't mess up.  I'm just saying that any place that does fried chicken in the kind of quantities Stroud's does, isn't individually seasoning each piece of bird.  They'll premix their flour/seasoning in bulk and in the proscribed proportions at the beginning of the night (or even have large quantities of a pre-made mix,  prepared to their specs by a seasoning packer) and use that to prepare the chicken, thus insuring uniformity.  Therefore, if they screwed up your order, they screwed up EVERYBODY'S order that night.  And if that happened, knowing the way Stroud's operates, they would have discovered the error long before you were served.

Again, I'm not saying you're wrong--you tasted what you tasted and no one can argue with that.  Furthermore, The Travelin Man has said he's had a similar, unconnected experience.

I would argue though that the issue you're talking about is, exactly as stated above, a matter of taste.  You might just not care for the type of chicken Stroud's serves.  I can tell you definitively, that in roughly 50 visits to Stroud's, over the years, I've never had any problem with the flavor (or lack thereof) in their product.  It has never tasted bland or under-seasoned to me.  My wife will testify, under oath, that I'm not shy about my salt/seasoning intake, and I've never had to add salt or pepper, or any other kind of seasoning to a meal from Stroud's.

Again, not saying you're wrong, just saying, maybe, Stroud's chicken doesn't fit your personal Fried Chicken Flavor Profile.

Hope the rest of your stay in KC provided better food experiences.

Re:Question about Strouds 2013/09/23 10:12:55
blackirondude definitely has a legitimate point but as a Stroud's fan and multi-time customer I believe that what he was tasting was intentional and not an error of omission. I would descibe their approach to seasoning the crust as "subtle" as opposed to bland. They seem to prefer to let the "chicken-y" flavor of the pieces rule the day. Also, since Stroud's gravy is perhaps the best I've ever had, too much seasoning of the crust would probably be overkill.

FWIW, I agree with both gentlemen above. I LOVE Stroud's chicken. I prefer my chicken seasoned with a little heavier hand than they use. It does not diminish my enjoyment of Stroud's one bit....and I intend to prove this theory in about two weeks! :-)

A couple of weeks ago, we had lunch at Chicken Mary's in Pittsburg, KS.  People are known to drive a long distance to eat here.  The food was by no means bad, but the difference in quality compared to Stroud's is night and day.

Buddy brings up an interesting point.  Stroud's makes an insane amount of pan fried chicken everyday and yet it tastes like it was made to order by your grandma for you alone.  This is no small feat.

Well, if you like a full flavored fried chicken, you could try putting jerk seasoning into the crust. I have; it's actually pretty good (I've tried several strong flavors ever since I once had fried chicken with falafel-style seasonings).

We are talking about jerk seasoning, right?

P.S. 34 years of marriage to a Kansas City girl=at least 34 annual Xmas/summer trips to KC=34 visits to Strouds.  Add in the occasional meal when I was in town for either The American Royal BBQ Cook-Off or Roadhouse demo trips and that takes us up to, give or take a few, 50 visits to Strouds.

Buff,

My go-to chicken place in Pittsburg, KS is Barto's specifically because their hard, smooth chicken crust (what my group of buddies call the "chicken helmet") is so different from Stroud's. This helps to put it (and great places like Gus's in Memphis) in a different fried chicken category. I always fear that others who offer Stroud-style pan fried chicken will pale in comparison.

Howard-
Thanks for that info and confirmation on Barto's Idle Hour.  It has been high on my list ever since Chris & Amy wrote a review for it.  Unfortunately, we were driving through Pittsburg (I hate spelling that word without an H) on a Sunday, which means Barto's would be closed.  And "chicken helmet" is a great description!
