I don't know what the Best mexican Food Recipe is,it depends on your  personal tastes.I may like something  that you don't care for.
Rob Walsh has a book entitled Tex Mex Cooking.It has recipes and about various popular mexican foods. There is a chapter about the chili Queens of San Antonio, about tamales,etc. It's very interesting.
There are good mexican cookbooks out there. Rick Bayliss or Diana Kennedy  have books with lots of recipes in them.
I have one called Conchita's CookBook that was printed in the 1940s by Naylor Press in San Antonio. I also have a paper back one from Dover Publiations which is an older book,forgot the author's name. Mexico and its different regions have a lot of variety besides tacos,enchiladas, tamales, tortas, etc. Even basic or street food has infinete variety. There is an enchilda where you use cheese,and the sauce that goes over it is a smooth bean sauce,instead of the usual red or green sauce or mole.Hope this helps.
