OVEN FRIED CHICKEN WINGS - Mon, 10/21/13 5:45 PM

HELP, I'm trying to obtain the recipie from COOKS Country for oven fried chicken wings using as a rub/brine baking powder and salt.  My issue was given away and although I subscribe to both their magazines I can't retrieve the recepie, thanks

 Oven Fried Chicken Wings (Cook's Country)
 serves 4-6
If you buy chicken wings that are already split, with the tips removed, you only need 31/2  lbs.
 
4 lbs. chicken wings, halved at joints, wingtips discarded
2 TBS baking powder
3/4 tsp salt
1 recipe wing sauce (recipes follow)
 
Adjust oven racks to upper-middle and lower middle positions and heat oven to 250.  Set wire rack in foil-lined rimmed baking sheet.  Pat wings dry with paper towels and transfer to 1-gallon zipper-loc bag.  Combine baking powder, and salt and add to wings, seal bag, and toss to evenly to coat.
 
Arrange wings skin side up in single layer on prepared wire rack and bake on lower-middle oven rack for 30 minutes.  Move wings to upper-middle rack, increase oven temperature to 425 and roast until wings are golden brown and crispy, 40-50 minutes longer, rotating sheet halfway through baking. 
 
Remove sheet from oven and let stand 5 minutes.  Transfer wings to bowl with wing sauce of your choice, toss to coat and serve.
 
Buffalo Wing Sauce
makes about 3/4 cup
 
1/2 cup hot sauce (Frank's Red Hot Original Cayenne Pepper Sauce preferred)
4 TBS unsalted butter, melted
1 TBS molasses
Combine all ingredients in large bowl
 
Smoky Barbecue Wing Sauce
makes about 3/4 cup
 
1/4 cup chicken broth
1/4 cup ketchup
1 TBS molasses
1 TBS cider vinegar
1 TBS minced canned chipolte chile in adobo sauce 
1/4 tsp liquid smoke
Combine all ingredients in large bowl
 
Sweet and Spicy Thai Wing Sauce
makes about 3/4 cup
 
1/2 cup packed brown sugar
1/4 cup lime juice (2 limes)
1 TBS toasted sesame oil
1 tsp red pepper flakes
1garlic clove, minced
2 TBS fish sauce
 
Combine sugar, lime juice, oil, pepper flakes, and garlic in small saucepan; bring to simmer over medium heat.  Cook until slightly thickened, about 5 minutes.  Off heat, stir in fish sauce, and transfer to large bowl.

My question on this method is, how long do they brine???

The Cook's Country chicken wings don't call for a brine. Other popular oven-baked chicken wing recipes that include a brining process range between 1-3 hours in the brine.

That's NOT buffalo wing sauce!  Never does Buffalo Wings sauce use anything sugary!

Mild: 12 oz Frank's Red Hot, 3/4 stick of butter or margarine
Medium: Add to the mild sauce 1/2 to 1 ounce of tabasco
Hot: Add to the mild 1.5 - 2 ounces of tabasco
Blazing: add a pinch of cayenne powder to the hot sauce.
 
Over low heat, let the butter/margarine slowly melt into hot sauce. Do not boil.
 
Any other concoction of a sauce may be excellent, but it's not Buffalo sauce if the recipe contains more or different ingredients. (Except, if you want to substitute the Franks for Crystal or Pete's, although I wouldn't do it, it's still the same thing).
 
Cook's Country is generally excellent, but putting molasses in the sauce would render it to NOT be a Buffalo wing. I also, have never used flour, baking powder or other such coating to my wings. And they still come out crispy from the over.  However, I saw the episode where the wings were made, and their technique should work for anyone.

So, if I add a little mustard to the sauce, I can't call it Buffalo Wings? How about a little brown sugar?

Scorereader - I checked to see if I copied the recipe wrong, and CC's buffalo wing sauce definitely calls for for 1 TBS molasses.
 
rbright - I don't know anything about cooking wings, but ate some made with Crystal hot sauce and a little honey and they were very good.
