Last week we processed 2 pigs, one being about 400lbs and one 300lbs. I am always looking for different things to do with Ham. We cryovac it into Ham roasts, shanks for soup and beans, portions for ham sands. Back when was I was younger, my Mom would take the leftover Easter ham, take the meat off the bone, send it through the crank meat grinder. She would then grind pickles and mix the ham and pickle with mayo for, Ham and Pickle sandwiches. Does anyone else remember doing this ?????????? this is the ham we had smoked with cherry wood........

First, I never heard of ham and pickles as you described. Second. I'd sure love to have one of those sandwiches. Third, that ham looks glorious.

Interesting idea! I do love the combo----in fact you've now made me crave ham and pickles together for lunch with those beautiful pictures. So I'm going for a Cubano-----that definitely has ham and pickles!

My mother used to make a sandwich spread by running German bologna and pickles, and I think a little onion through the hand grinder. She mixed it with mayo also.  I used to love those sandwiches

My mother used to make that....we called it "ham salad".  I was never a big fan.  I like thick slices of ham and LOTS of pickles with lettuce and tomato.

I talked about this so much this morning I had to make it. I already had a ham shank in a navy bean soup cooking on the stove. I figured what the heck, I starting having a craving for pickles.........just like I remembered. good........

Tom, that ham was was from the picture of the pig I sent you. They were the biggest hams I have ever seen. We smoked some bacon, the rest will be smoked nextweek when we make and smoke the German sausage..........

Every time we had a ham my mother would clean off the bone and whatever leftovers and run it through the grinder with mayo, pickles and some seasoning and DAMN it was good...I can still taste it in my mind...I've tried to make it but have missed each time....thanks for bringing that memory back...maybe we'll do a real ham for Christmas this year.  =)

Big-g, as you could see, your not alone in the Ham and Pickle memory. I grew up with Depression parents, nothing got wasted. I still do many of the same things today, that they did back then. The Easter Ham we had was big, we had it for breakfast. Then Mom would make Au Gratin potatoes for a Ham dinner, Sandwiches for school lunch. Like you said after that the bone got cleaned down, the sandwiches were memorable, maybe because we all pitched in and helped. It's nice having a flash back about family, it always puts a smile on our face.................Bill

it was always called ham salad at home, but mom would make it when there was leftover ham (rarely)

My mom did it all the time with leftover ham--that and croquets---also--she would make the same "salad" with Spam--LOVED that--its the the only way i really like Spam!--but the ham was better!

Yes! Ham + pickles + mayo = ham salad! A bit of mustard added for tang, and I love it - I can get a really good ham salad sandwich at Honeybaked Ham here in Burlington. Your baked ham is a thing of beauty.

My mom also made ham salad by using a hand grinder and ground the ham, onions, and pickles together and then added mayo or Miracle Whip. She almost always made a Quebec-style yellow split pea soup with the ham bone. She'd leave some of the ham on the bone and let it fall off as the split peas simmered. Ugh! I hated the smell/taste and would get something else. Dad and others would eat it once, but then she had all the leftovers for days. Hadn't thought of that in a long time. Mom was a wonderful cook and made some really great chowders.

My mom made her version of that sandwich when I was a kid.  Like others here we called it ham salad.  I haven't had on in decades.

I would bet, the next ham you all  make will put Ham & Pickle sandwiches in your future. The one I made yesterday is the first one I have had in 50 yrs. It brought back a lot of memories, I remember we had to have a block of wood, special so the meat grinder held tight to the table. We also took turns cranking the handle for Mom. Something so basic, yet so good. We never called it ham salad, that was to fancy for us. My parents figured giving us kids three meals a day, clothes on our backs and a roof over our head, was a job well done.............Bill

I guess we're lucky around here.  It's been here forever, and easily found in the deli case, the ham salad being right next to the tuna salad and chicken salad and egg salad.  It's the same basic, simple thing that's described here.
 
At home when a kid, say 50 - 60 years ago, mom would do the same thing with ring baloney from local shops.  She had the tabletop clamp-on hand grinder (my job to turn the crank), and we called it "sandwich spread."  Looks like it's in lots of places.

My mom also had a thin piece of wood she used to hold the grinder tight to the table. Thanksgiving was the one sure time every year to see the grinder. She always used it to grind up the bread, apples, and onions that were the main ingredients for the turkey stuffing. Ham salad was the other time she used the grinder. My sisters and I also took turns cranking for her.

My mother also made ham salad with the hand grinder, but she didn't put pickles in it just ham onion and mayo.  I somehow lost my hand grinder.  Now it is the processer or the grinder attachment to my KitchenAid.  Somehow not the same.  Especially for chopped chicken livers.

For some reason, we never ate ham salad growing up, but my absolute favorite sandwich is grilled ham and Swiss: mayo on one side of the bread, the other half Creole mustard, on a good rye or pumpernickel. 
 
I love red beans cooked with chunks of ham in it - actually they go great with any type of dried bean.
 
My newest Cook's Country has a recipe in it for making your own deviled ham, which had a small amount of sweet pickle relish in it.  I'll post if anyone's interested.

BelleReve: If you have time I would like to see the deviled ham recipe. I agree with you on your choice of sandwiches. My next Ham sand will be Baked ham with melted swiss or provolone on grilled sour dough bread. I want it crispy, crunchy, cheesy and tender with a good spicy mustard..........

Yes, I've had it many times, and made it for my girlfriend. I've never heard it called a ham and pickle sandwich though. I've only heard it referred to as deviled ham or ham salad.

We finally got the family together Monday night. I have been waiting for a Apricot Glazed Baked Ham dinner with Au gratin potatoes. This is one of the better Hams I have ever had, it just melts in your mouth. The Apricot glaze puts a wonderful color and shine on the outside of the Ham. Now It's time for a few sandwiches.............. Billyboy, "who was knighted yesterday Sir Ham-A-Lot" inspired me to make of a few of those great looking grilled Ham sandwiches he had in upstate New York..........pnwc

Joe, my compadre, we only use the lesser quality stuff off the bone stuff for that. This Ham roast is from the butt end after the shank was cut off. The center cuts are for ham steaks and slicing for sandwiches. Grinding this up with mayo, would be like eating 5 way chili..........who the Hell eats that...............

Two things I like about processing our own animals is, I get to control the amount of Sodium and smoke that applied to the Ham. I am also able to free range them, hormone free, and give the animal a good quality life.
 
Joerogo, I save some of the better slices for breakfast. Three pullet eggs and Baked Ham, my kind of breakfast..........

LOL - As I finished reading RF and checked our local FB yardsale site somebody had posted they ahad 2 pot belly pigs, that needed a new home.  If I was closer to home Michael and Lisa would be the proud owner of his and her pot belly pigs.

CajunKing and Michael Hoffman....We had to thin the Roosters down to one yesterday. On Monday, we were working in the corn field when one of the Roosters took off chasing one of the hens. The hen was squawking, another rooster heard that and ran at her like a bolt of lighting and hit the other rooster full speed to protect the hen. The Roosters only have two jobs in life, protect the hens and breed. Having to many roosters in the coop isn't a good idea, they will work out well today in the stock pot. The head rooster here is making chicken noodle soup today...........pnwc

I dunno, growing up outside Munich for my early years we used to go to the communal hog butchering and I remember eating "leberkase" which I still love today. Get some quality Braunschweiger and a thick slice of onion on rye. Good stuff.

I agree with the chickens, I dont mind eating them, but after being trapped by a rooster when I was a kid, I dont want to raise them.

The murder indictments to which I referred would not be for killing pigs, Don.
 
About those chickens. When I was a little kid I had to feed and clean up for 200 or so chickens. That included dragging 100 pound sacks of feed around. I hate chickens.

While potted meat is not a thing I wish to eat, I do like Underwood Deviled Ham. But when you say bad things about Braunschweiger/liverwurst you cut me to the quick.

Michael, we had 5 roosters left over from about 15 total. One of the Roosters was in with one hen that stayed by themselves. Day after day I would look over at them and he would always be standing right next to her. The other Roosters would bully the hens and be more Macho, wanting to rule the roost. Just to show you good guys don't always finish last, we saved the devoted loving Rooster to service and protect the hens. This Rooster now has 14 hens to look over.
  In a roundabout way, Mollie sees that looking for a nice guy is better than looking for the Macho one. You could learn a lot on a farm.
