Steel Cut Oats

My mother, bless her heart, bought a box of steel cut oats because she heard they're good for diabetics. I don't know about that, but my task is now to make something with them. I was hoping for something other than just making oatmeal out of them, and something that's still diabetic-friendly (I've been finding a ton of muffin and cookie recipes). I suppose it could be an oatmeal-type recipe if it's something savory I could use in place of dressing at Christmas, or maybe dessert if it's not too high in sugars. Probably I'm being too picky, but does anyone have anything?

I love the steel cut oats. However I have never used them for anything but oatmeal. I  think they are one of those items you might just have to experiment with. Seems to me that the rolled oats or othesr might work better in recipes. But then perhaps I am wrong.

Good time of the year for apple crisp..........I also have a good granola recipe, it's easy and goes great on Greek yogurt......... The Chew tv show, also had a good recipe yesterday, it was a sour cherry crisp..........enjoy

My other thought was maybe if this would work using them instead of rolled oats (I'm guessing I'd have to either par-cook them or add more liquid).

    Granola:

 
3 Cups........ Rolled Oats
1 Cup.......... Sliced Almonds
1 Cup...........Chopped Walnuts
1 Cup............Coconut
3/4 tsp .........Salt
1/4 Cup..........Veg oil
1/2  Cup.........Honey......you can split 1/4 cup of maple syrup and 1/4 cup of honey, if you like.
1/2 Cup ..........Brown Sugar
1 ea................Egg white whipped, even two is ok
1/8 cup ...........Cinnamon
 
I put this mixture on a half sheet pan lined with parchment paper. Bake at 265 degrees for 1 1/2 hrs.........I check it after an hour and fork it, to loosen it, to make sure it's cooking all the way through........You can add dried fruit, I add the fruit when I use, so I can change dried fruit if I want to. Let it cool break in pieces/chunks and put in zip lock bags. It will last a few weeks...............Enjoy

Thanks! I'll have to do some research to determine if steel-cut oats will act the same as rolled oats, though. I know they take about twice as long to cook and I think require a lot more moisture. But I'll definitely try it with regular rolled oats! I love granola.

Not only does it sound yummy, it is officially on my Christmas dinner menu! I'm also intrigued by the Mediterranean and the Sichuan. And I think I'm going to make the last one (the clean-eating) for dinner this weekend. Thank you!!! That is exactly what I've been looking for. I just ran out of patience.

I made that one for dinner tonight with yellow onion instead of red. It was amazing, especially with just a little melted butter drizzled over it. Thank you again!

Several recipes are out there on Google. Some show pinhead oatmeal which is the same as steel-cut.

That last one and the one with Turkey Bacon, Cheddar and Egg looked pretty good.

Felix--this is an interesting thread, and thanks to CajunKing for posting that article about savory steel cut oats!  I'm definitely going to try at least one of the ideas in there.  It kind of reminds me of the time I had congee for breakfast--it was such an unusual dish for breakfast in my world, but I loved it.  I see there's a version of congee in this list.  Fun stuff in here--savory applications make a lot of sense, too.  Thanks again!
