My Soup of the Day - Wed, 01/1/14 6:52 PM
0
A shrimp-seafood soup.  It made a good light soup for lunch (1:30 pm) and an appetizer for the black-eyed peas & hog joules tonight.

Last Friday or Saturday night my wife boiled shrimp for our supper.   I realize she didn't use a lot of seasoning in the water and it had a good shrimp flavor.   I saved it.   This afternoon, I pulled it out of the frig and heated.  To the shrimp stock (abt 2 1/2 quarts), I added 1/2 can of evaporated milk; 1/4 stick of butter/margarine; 1/2 of medium onion; small can of minced clams & juice; and a small can of crab.   When the soup was hot (not boiling), I added the left over shrimp (wasn't much, may be 12 or so); about 5 outer leaves of Napa cabbage (chopped) and pepper & garlic power.

About a month ago, I made a clear soup using shrimp stock made of shells from 2 lbs of shrimp.   This one just had some diced onion and a little Napa cabbage.

Anyways ... Happy New Year y all.

It was good.    The pictured bowl was the 3rd one and mid afternoon snack.     ... i had been fussing with the wife for a while, not to add a lot of bay seasoning to the water when boiling shrimp.   The stock would make great soup.     Oh, total cost to make the above soup was about $4.  ... clams, crab, & 1/2 can of milk.

Anyway, I have a friend who owns a local fish house.   Since making stock from the shrimp shells is easy, I will ask him to save shells for me.    They throw these away when peeling shrimp for the customers.   ... ...

lleechef's Italian lentil soup last night, with bacon and spinach,  was a two-bowl treat. Next up, pasta e fagiole, please. And I don't care what she says I call it pasta fazool.

Boy that sure looks good. Can I ask if the green leaves floating in the soup are torn basil?
