Question for Georgia folks...4 sinks???????

I was reading the regulations for a Georgia Food Truck and it says you have to have a 3 compartment sink for washing dishes, a separate sink for hand washing and yet another separate sink to wash vegetables and fruit.
Any comments on this extra sink for vegetables and fruit?
This is the first I've read on this and I was thinking a 3 compartment and a hand washing sink was what is required.

That's actually fairly common. You might be able to get away with getting a used kitchen sink and putting a dividing wall between the side you designate for hand washing and the side for washing vegetables. You can find such sinks on Craiglist for nothing (literally). I know it's a pain space wise, as you don't have much room in the truck, but following the rules from the outset will result in fewer headaches down the road.

You might also check if you can do the washing of those items at your commissary kitchen, and alleviate the need for that extra sink.
