Sure Jim!
This could be called "leftover soup"!  I had 2 pieces (4-5 oz.?) of leftover filet mignon from a previous dinner.  I know, who has leftover filet??!! " /> but I had also made pommes darphin and we ate all of it.......and left some meat.
1 C dried, soaked, cooked or 2 cans black beans
1/4 large onion, chopped
2 garlic cloves, chopped
1/2 each red, yellow, green pepper, chopped in large pieces
1 cubanelle pepper (because I had one......you could use any pepper), chopped
corn (I didn't have any)
cubed beef (if using raw beef, sear it in a hot sauté pan)
beef stock
cumin, Tabasco, salt and pepper to taste
chopped cilantro (sorry, Mar)

To the cooked beans add all the ingredients, except cilantro, and simmer 30 mins.  Add the cilantro at the end.

I love scratch made chicken noodle, and spicy black bean. This winter was so chaotic for me I never got around to making more than one batch of chicken noodle though. Managed to remember fresh thyme, rosemary, and sage that time though, makes all the difference in the world.

I sometimes make an almost-from-scratch Thai beef soup with bean thread noodles (I use a pre-made stock from Wegmans -http://www.wegmans.com/webapp/wcs/stores/servlet/ProductDisplay?langId=-1&storeId=10052&catalogId=10002&productId=366561 ). Add a little tomato paste, julienned carrots and celery, onions, cilantro, and I add bean sprouts and the raw beef at the very end right before serving so they're just cooked through. The bean threads soak up the broth, and I add a healthy squirt of sriracha to round it out. Perfect winter time soup.

My favorite soups to eat in restaurants are clam chowder & lobster bisque. Just recently I had an outstanding lobster bisque at Coopers Hawk in Indy. My current fanorite soup to make at home is Pioneer Woman white chicken chili.

I'm with wallhd. I love a good French Onion soup, (best I ever had was at the Peak Restaurant in Hong Kong) and if it has clams, I'll probably eat it, (except for Manhattan Clam Chowder. Never have developed a taste for that one). I love a good New England clam chowder, (again, an old Hong Kong restaurant, Lindy's Steak House, takes top honours for that one, so far), but over the last few years I've really come to love Hatteras Style Clam Chowders. The ones at Sam and Omie's in Nag's Head, NC and the Black Pelican, in Kitty Hawk, NC are just about the best you can get anywhere.

I used to hate split pea soup ever since my mom made it and didn't soak the dried peas.  It was pasty with really REALLY hard lumps in it.  But then my husband made it using a him bone for the broth. It was so good I couldn't believe it was it was the "dreaded" split pea soup from my childhood.
Another soup he makes is sweet and sour cabbage soup. I can't get enough of it! He uses short ribs to make the broth and it is yummy!

On the one hand, I never soak the peas, but on the other, I always make it in a slow cooker, so that probably explains why I don't have a problem. I typically use some sliced Johnsonville or Hillshire Farms smoked sausage in the broth, although I have used a smoked turkey wing. Advice: I used a lamb shank bone end once. I love lamb, but, for split pea (or lentil) soup, never again. It just doesn't go.

My favorite soups are almost always seafood soups or chowders.  The best soup in a restaurant near me is the minestra, which is a spicy sausage soup.  I had never heard of minestra until finding this place.

Anything that's not a chowder or a bisque. I like a nice broth, you know, the kind of broth that you can only get from simmering bones for 8hrs. A good beef barley, vegetable, beef vegetable, chicken noodle, etc is my preference. I also love a good split pea.

Oddly enough I'm a midwestern transplant who's been in new england for just over 10yrs, and when I first moved here I couldn't get enough chowder and bisque, however; I've gotten away from cream based soups. I'll take a RI or Manhattan chowder over a NE chowder any day.

Only exception for me, in terms of NE chowder, is the clam chowder at Kelly's Roast Beef in MA (several locations). It's the only item on their menu that I keep going back for. Heavy on the cream, light on starch so it has a nice light body, and super super heavy on the clams.

Saw this thread pop up yet again and thought I'd add another favourite soup to it. Velvet corn and crab soup. My dad used to make this soup and it was always a big hit. It came from Karen Aland's "Chinese Cooking, The Easy Wok Method" cookbook and is a real killer soup. Found a link to a .pdf of the recipe online and thought I'd share that with folks who appreciate a good bowl of soup. This recipe also scales up pretty well and we have made double recipes of it many times. It keeps well and is extremely satisfying.

annpeeples asked for the recipe for potato leek soup.  Please keep in mind, I don't measure anything so quantities are approximate.
1 bunch leeks (there are usually 3 in a bunch)
1/2 stick butter
3 T flour
3 russet potatoes, peeled and diced
chicken stock
heavy cream

Trim the tops of the leeks.  Cut them into quarters (whites and greens) and slice thinly.  Put the sliced leeks into a bowl of cold water and toss around with your hands.  Transfer to a colander and discard water.  Repeat until there is no more sand or grit on the bottom of the bowl.  Put the butter into a pot and melt.  Add the leeks and sweat for about 5 mins.  Add the flour and stir.  Add the potatoes and cover all with chicken stock.  Bring to a boil, stirring.  When the potatoes are done add about 1 C heavy cream.  Return to a simmer.  Of course, salt (I don't add any, the stock is usually salty) and pepper to taste.
