I made some homemede salami a few weeks ago. I though Salami Hash sounded good..
 
Onions, potatoes, salami.....I think it needs some peppers...

 
Two eggs over easy with Salami Hash and sourdough toast....

That looks mighty good, I hate to say. I love salami and eggs. In fact, I made some for myself on Sunday.

I've actually done this with (of all things) leftover hot dogs diced up in desperation during a 1990's snow storm.

Haven't tried it with salami or hot dogs, but I'm putting it on my list.

Bill, you never cease to amaze me with what you come up with. I developed a taste for corned beef hash while in Groton and on the boats and I think I would definately like this. I love all cured meats.

This is a compliment by the way.
 
I've been making something like this for years using whatever sausage I had on hand and whatever cheese I had.
 
I called it Breakfast Mess.
 
Salami, ring bologna, andouille, beef franks. Cheddar, mozz, muenster, swiss. Reds, russets, Yukon golds.
 
Just finish it with eggs and I serve it as Breakfast Mess.

I wonder if there's a meat that wouldn't work in hash.  I guess chicken or turkey hash might not be too flavorful on its own.

Next time I would try it with the Spanish Chorizo, it would soften a bit while heating and releasing it's juices/fats into the potato when frying.

Back "then" (50's - 60's), if there was no breakfast meat in the fridge, mom would fry up some slices of summer sausage for our fried eggs.  After it got a little crispy, it seemed enough like bacon.  Worked for us.
