6Star, I tried the recipe you posted and it was close to the stuff I get at our local Hawaiian place. But something was missing. Kona mentioned that some places put fish in their macaroni salad. So I went and purchased a side of macaroni at the Hawaiian place to compare. Sure enough there were small bits of grey stuff, barely noticeable, that must be the fish. It does give the MS more flavor. Joe

Joe, I am glad I could get you that close. I saw KonaErnie said, "some add canned tuna fish or kamaboko (fish cake made from surimi) to the mix" so that is probably the ingredient that is missing from the recipe. I was in Hawaii maybe 20 years ago and I remember eating quite a bit of siamin and loving it, but, even though I love mainland macaroni salad, I don't remember eating the Hawaiian version. This was probably because I didn't eat a plate lunch there as far as I can remember.

1 pkg. of elbow macaroni, cooked, and well drained. Chopped onion, and celery(lots like sk bob mentioned earlier), pitted black olives cut in half, small chunks of cheddar cheese, salt and pepper, and enough mayo to hold it together, but not that its too sloppy.
