Unfortunately, most places dont "gut" the bread anymore before putting on the ingredients. We have a small Italian deli on the east side of Milwaukee that serves hot sandwiches for lunch. They are the real deal(homemade meatballs, sauce, etc..)and they still gut the bread-believing that the bread is more of a vessle for holding the meat, etc....If you can find a good Italian deli in your area, ask them to gut the bread first-if they look at you funny, then they arent authentic!!
