need a healthy item for concession trailer

we love our menu but it is really lacking something sort of healthy ... we are just looking at options for a healthy lunch or dinner meal...we have the normal stuff onboard to make just about anything
.............any ideas?

I offer several salads. I have just a garden salad, a grilled chicken salad, a chef salad, and a taco salad. I utilize ingredients I have already so it doesn't create extra inventory. By far the most popular (and least healthy) is the tack salad: tortillas chips at the bottom, a layer of lettuce, tomatoes, onions, jalapenos, and then topped with seasoned ground beef, chili, cheese sauce, and sour cream. People love 'em.

Chicken salad or tuna salad, wrapped in a iceburg lettice leaf, a la P F Changs. Make them beforehand wrap in handi wrap. quick, neat, tasty!
