 need help with albacore smoking

I just caught a bunch of albacore and I'm trying to smoke them but I need help. I need help with a good recipe for the brine. The brine I use is made up of salt and brown sugar. The smoke albacore taste so plain. I want a brine that give a good sweet flavor. I use hickory chunks.

    First make sure you get all the parasites out of the fish and after that you are on your own.

        I have never used a smoker (although I'd like to), but a friend who supplies me with a lot of smoked fish tells me he only uses alder wood when smoking fish. Take that for what it is worth and enjoy the fish!

          Alder wood or even chips would help, but oak or Hickory will work also.
          Try using a soy based (Teriyaki) brine/marenade. White Tuna is very mild. But it takes the smoking very well! We used to buy large chunks of Smoked Albacore on the Redondo Pier in SoCal. They made great snacks (if a bit smelly in close quarters).

            Are you hot smoking or cold smoking?
