Personal pref. is white. Though most places around here serve yellow.

DJ, all hot dog stands in the midwest use white onions. Onions can be major work. I prefer working smarter instead of harder and purchase diced onions in 5 pound vac packs. Food service cost is less than $6 for a 5 pound bag. Always check the bags for the packing date and purchase product that's good for at least 7 days after the packing date. Freezing/thawing pre packed diced onions just doesn't work. Retail diced onions are too expensive. Food service companies offer the 5 pound bags at a wholesale prices. Over the last few years, I've started using the various sweet onions for hot dogs, salads, etc. I use white onions in cooking though. We bought our first vidalias of the season last week. I use them all of the time that they are available

I was brought up that yellow onions were for cooking, white for eating raw, such as on dogs, and in salads such as egg, potato, chicken, etc. Purple for your green salads. Was my Mom a little anal about her onions? Regardless, it hs stuck with me. To answer the question though, white.

I like a strong onion on a dog to counter the sweet relish. My "everyday" onion is the purple but sometimes I go for a spanish or bermuda, of course when vidalias are available....

Hands down, my onion topping of choice is the Sabrett, sauteed, orange-colored onions most often available in the Greater Metro area at hot dog carts and many hot dog stands. Put a little mustard, and pardner, that's hot dog eatin'. The Bear

Heck, at $9 for a 50 lb bag, how can you pass that up. I recently bought a sac of purple onions. Had them for $8 a 50lb sac. Don't think i'll be going back to white. Purple is much better tasting, not as harsh. Plus, being located close to Northwestern University the purple color fits in.

Gus, in our business, what ever works is the best. I sell from a cart and state law prohibits the processing of any food. Cutting, dicing, and slicing is considered processing, so I'm required to purchase diced onions. I've never seen pre-pack sliced onion and diced are available from Sysco and our favorite source: Restaurant Depot. $5.95 for a 5 pound bag. Although it's costly, my time is worth money and anything to lighten the load is worth the cost. Happy to see you and your wife on the tour. Take Care.
