What exactly is pad thai? I have seen it on menus, but have only recently worked my way up to Pho.

It's one of those signature dishes that tastes different at each establishment even though it has close to the same ingredients everywhere you go.

I'd expect that Brown Sugar Cafe in Boston has a pretty good pad thai. I like everything else there is good. I actually cook pad thai myself from http://www.thaitable.com/thai/recipes/pad_thai.htm . I like that version better than the others I've found.

Pad Thai is very addictive. I like it spicy hot with extra ground peanuts, extra bean spouts, and extra green onion. Anyone who comes through Lexington, KY, and likes Pad Thai should go to the Siam on New Circle Road. It is by far the best local Pad Thai, in my opinion.

The canned preserved Thai vegetable, "turnip" in Prem"s recipe is an essential ingrdient, as well as the fish sauce.
