pre-cooked sausages?

my local restaurant supply house sells precooked italian sausages in bulk (not sure of price at moment) and I was thinking of adding these to my hot dog menu for my cart business. Question, since these are pre-cooked, do health boards relate these similar to hot dogs or would they still see these pre-cooked sausages as other meats, etc? Not sure of the taste if I were to steam them, so looking to ask others if you have ever tried a pre-cooked sausage that was steamed for serving? Would others even offer this up from a hot dog cart without the grill marks?

In most counties in the US you are only allowed precooked sausages from a cart.

Own a hot dog joint in Charlotte and also serve precooked Italian sausages. At first they would shrink up and dry out in no time in the steam table. By experimenting, I found that if you wrap them individually in aluminum foil first, they stay juicy and resist shrinking. If I'm running short, I drop them frozen in hot water for a short while to thaw. Then I wrap them in the foil and place them in the steamtable. Works for us and am sellimg more of them lately.
