Just bought my first cart. Got a used basic "All American" about five years old and in great shape. Let me give you some backround: I first had the Hot Dog epiphany about 8 months ago. It was brought up during a conversation w/ some friends and my wheels just started turning. Could this be a viable living? I have been increasingly unhappy at work for the past several years, I am a commercial subcontractor in Florida. So I started my research. Bought one of the hot dog guides for $100 that was found to be wanting but it did get me fired up. Spent the next several months figuring out the red tape in my spare time. A pain in the ass but all very doable. At this point I have committed to at least run my cart during construction slow downs, which are becoming more and more frequent. Commissary options slowed me down for a while until I discovered a local commissary contractor. Thank god for that- its only $400/year which includes state application review and help w/ inspection. At this point I am starting to feel things transform from pipe dream to reality. Which to tell the truth is making the hair on my neck stand up- the thought of doing something enjoyable for a living: I had given up on this idea years ago. Not to sound corny but I think I can see a life change on the horizon. I have a couple of questions for the experienced members if you have the time. I'm on a tight budget and am doing things in steps as I said the cart is basic so I want to make some improvements before final drawings and submitting my app. - I feel adding a grill is imperative. Can I install a stainless tabletop from Lowes if done properly or do I have to have to have a commercial model? - I want to add shelves on two sides. If I do this after inspection will I be in violation? - What if I want to add a third burner later? My commissary says to make all alterations prior to licensing but how much is tolerated in Florida? I would also like to hear your newbie pitfalls, I know there is much I haven't thought of. Thanks, Dave

Yes by all means buy the Stainless Table top grill from Lowes, I had one and I used it different than you are going to. I took the top off and put a splash pan on it in a portable set up. I also got an adaptor to use a large propane tank. I bought it on sale at end of a season 79.00. My cart has three burners, I think you can change them out very easy, buy them at Harbor Freight. Yes I would do all modifications first. and say that's how it came from factory. Later CBB in PA and Good Luck

Welcome to the bizzare world of foodservice. Be prepared to question your decision constantly while smiling like an idiot the whole time because its a blast to do. Dont expect to make it right away and just hang in there, IT WILL BE WORTH IT!
