 really simple cranberry sauce

really simple cranberry sauce Sat, 11/17/12 1:37 PM (permalink)
A few days before Thanksgiving, I offer this simple alternative to canned cranberry sauce:
 
1 cup cranberries
1 cup sugar
1 cup water
 
Boil it all together until the cranberries pop.
 
That's it. Almost as easy as opening a can. You can squeeze some lemon juice in there, if you want to.
 
Enjoy.

    Ah, but can you slice it for the turkey and stuffing sandwiches?

      the hard part is making those lines around it where the can indentaions are/should be........I recommend either tieing jute string to replicate it or use one of those old fashioned vegetable peelers, being careful not to gouge it too much

        Not trying to steal the thread...but...1 bag of cranberries, Cleaned
        3 cored apples, 2 seeded oranges, 1 cup of sugar (or more to taste)...run it through a grinder mix well and chill.  Simple, bright and VERY tasty....thanks Mom.

          Big...g, that sounds great. Better than mine, for sure. Thing is, though, lots of folks will read that and open a can! My recipe is competing with the can, not Mom's!

              Thanks, Mosca-great, simple yummy recipe. Bob will love it....but I still have to have the jellied stuff in the can for me. Best of both worlds.....!!!!

                I use basically the same as the recipe you posted above, but add crushed pineapple, 2 pears, and 1 (airplane bottle size) Grand Marnier.

                  Ann.i my house we MUST have 2 types.....one a "Mish-mash" of what I am inclined to include for myself.....and one that has nice lines and looks shimmery for my wife and daughter.......GAWD Forbid!, I should touch it other than to get it outta the can

                        I bought a cranberry dish at Kroger called the Celebration that had pineapples in it and it was really good as well

                          There is no law that says you can't have more than one dish of cranberry sauce on the table. I always put out the canned variety even if I make a relish or my sister makes homemade jelled sauce or as I did yesterday, I make a delicious Soul Food Chutney from Art Smith (NPR.com) that combined a bag of cranberries, the juice and grated rind of one large navel orange, 2 fresh pears, sugar, cinnamon stick and some ginger.                             I always made 2 kinds. One is the same as the OP's, but with orange juice instead of water. Than a canned one where I slice them, smear on cream cheese, top with another slice of cranberry and finish with chopped pecans and orange zest.

                              Mine uses the same basic recipe as Mosca's. But I go half OJ/water. Half sugar/ half brown sugar and hit it with a big dash of cinnamon. A bit of orange zest for an extra kick and it's done.

                                Here's a quick and easy recipe for those of us who unfortunately are diabetic:
                                Quick and Easy (10 minutes) - No added Sugar Cranberry Sauce
                                1. Rinse a 12oz  bag of cranberries in a bowl and cull out any bad berries
                                2. Put cleaned berries in a small 1 1/2 qt micro wave proof casserole dish with lid on
                                3. Micro wave on high for about 5 minutes until soft and cooked
                                4. Remove from micro wave and stir in 1 tsp corn starch
                                5. Stir in 1 Cup Splenda (or generic sucralose) artificial sweetener.
                                 
                                Let cool before use. Add water as needed after it cools and thickens up a bit. This is not sugar free (because the berries have their own natural fructose sugar in them) but it is low in sugar and easier tolerated by diabetics. Taste wise I can't tell the difference in taste from the standard sugar based sauce.

                                  Well anything with Grand Marnier in it is better :) I'll for sure give that one a try...Mom called hers a cranberry relish and we would have whole berry cooked sauce as well as the jellied type.  I always liked the relish on sandwiches...yum!

                                    hummm  ... if one doesn't have the time for FC's TLC method; just pour the sauce/jelly into a can ... Then dig out when needed, just like the real can sauce.

                                        Michael, this must be a CT thing, I grew up with doing the same thing. My wife and kids look at me saying, Your kidding, Turkey, Stuffing and cranberry sauce on white bread ( Wonder).....Yep, nothing like it...............Michael what other food item can stand up looking so proud other than Jellied Cranberry Sauce in a can ......pnwc

                                            Lisa, Jellied Cranberry sauce is an acquired taste, it's like enjoying the smell of low tide from Long Island sound at Pleasure Beach in Connecticut.                                               Bill, it never occurred to me that it was just a Connecticut thing. I've always assumed it was the only way a sane person would eat a turkey sandwich.
                                               
                                              Now, about that low tide aroma. It is one of the most wonderful smells on Earth, and it's not limited to Pleasure Beach. In fact, for years hitting 95 on the way into Connecticut after a drive from here it was the first marvelous reminder of home.

                                                This year I made Ina Garten's. Fresh cranberries, sugar, water, zest & juice of 2 lemons & 1 orange, 1 finely diced Granny Smith apple, boil until the berries pop, then simmer 15 minutes. Ina then adds raisins & nuts, but I did not. Really good, loved the zest, juices, & apple. My new favorite.

                                                  I'm tired of the orange.
                                                  Bring to boil one cup of chopped turkish apricots (they are dark, sweet) with  1 cup white sugar and dash salt in one cup water.  Add 12oz cranberries and dash ground cayenne pepper.  Boil 15 minutes.  Take off heat, mix in one tsp fine fresh grated ginger,(peeled,)  Make 2 days before,refrigerate, serve cold.  Very nice, something different, chutney flavor for turkey and poultry.
