red onion mix for hot dog carts

I live in San Diego and we cannot sell anything unless it is packaged. I read somewhere that there is a really good red onion mix that you can buy for hot dog carts. Does anyone have the info on it? Thanks Sam

I don't know about red onions, but Sabrette makes a push cart onion sauce in foil bulk packs...They are made with dehydrated onions,paprika, etc. Once opened, it gos bad fast so keep it refrigerated! Not a long shelf life even under refrigeration. We use to use this product at our restaurant, but only a few customers ever wanted them. Wound up throwing away too much of it; it is not cheap. I do not ever recall seeing this onion sauce in individual packets though. If you keep it warm in the steam table, why would that be a problem? Get a sample from the factory and meet with the BoH and see if they ok it. Incidently, Sabrette makes a fantastic hot dog mustard in plastic gallon jars. Best in the business! Best hot dog, too IMHO.. 6 to 1's natural casing all beef...The Mercedes of hot dogs...Thumans (all meat - natural casing)being the Lexus This stuff comes from back East so you better check your FOB charges. Or, there may be a local distributor in your area...Either way, you're paying for the FOB to get it out to SD.
