Geez I'd think visiting in person your local health department, zoning department, and police department would be your first thought. Then maybe your state department of public health. Then and only after you do those things come back here and go to the top of the page a click on search. Then type in the topic of your question and read the hundred of post on almost any topic dealing with vending of any kind of food. Over the years the people on this forum have been kind enough to share and post their personal experience on this site and if they were thoughtful enough to do that new posters should be thoughtful enough to read and study those personal experiences to gain the knowledge they need. Good Luck

Pappy, NC health rules differ from county to county. Try your county buiding first (they love it when you show up in person!). If no good comes of it, call Raleigh. They've got some very helpful folks over there. But go local first and be VERY prepared when you arrive. Schematics if applicable, questions, concerns, etc. all prepared. They are generally a busy group of folks and getting your business out of the way quickly helps them feel good about you. Good luck!
