renting a truck...liability?

I am trying to rent a food truck from someone but they are concerned about liability. is there some kind of contract or agreement that will protect the owner from liability? I have a company and gen. liability insurance policy. he only has insurance on the vehicle.

i figured i would update this as i got an answer from a lawyer and an insurance agent.figure maybe someone might find this info useful. essentially the food truck owner would have to issue me a 1099 for which we could write any sort of agreement we wanted even if it involved me paying him for use of the truck. as long as i am technically his employee (or contractor ) this would cover me under his policy, in conjunction with my own general liability. the only other way would be to have a long-term lease where the title of the truck is actually put in my name with his name as the lessee. since we only wanted it set up so that i could rent it on nights and weekends that would be way too much work
