roastbeef onions peppers swiss and what sauce?

i had a roastbeef onions and peppers cheese steak thing but coulnt pin down the sauce but it was incredible....any ideas for a sauce/seasoning for a roast beef cheese steak or even for a south jersey style cheese steak?

If it were me, and I was making that sandwich at home, I'd serve it on garlic and herb bread with some mild horseradish sauce.

a good cheese steak is done with quality meat such as ribeye sliced ultra thin .. then the need for extra specalty seasonings are not required.. does it cost more ?? yes but the happiness your customer will endure will be priceless, and the word of mouth advertising will be well worth it too.. we started selling these when we first went out now we are known for our signature ribeye cheese steaks. we charge more but they keep selling so......

Can you give us some idea of what kind of sauce it was? Otherwise we're just shooting in the dark here.

lol sorry parrot...it was a type of aujus but not really....along those lines though...maybe a more italian version of it...think i tasted a hint of oregeno in there

If it is, it has to be from some sort of insitutional mix or concentrate. The complexity of preparing espagnole and the ingredients used isn't something that I can see going on in a sandwich shop or small restaurant. Just getting a roux right most of the time was beyond the ability of most established restaurants that initally signed on to KFC during the 50's to make Sander's gravy.

It probably was a package version of Demi-Glace. Many sandwich places use powder mixes nowdays. Arby's doesn't even TRY to pretend anymore, if you order a French Dip they pick up a Styrofoam container with instant Au Jus powder in it and fill it from the hot water tap on the coffee maker. That is just freaking sad in my opinion.

A great steak, cheese and pepper sandwich really needs no sauce...  not that I'd be opposed to one.
 
Phillipe's dips all of their sandwiches, no matter what the meat in the same Au Jus.

Scratch made.
I roast 2 top rounds a week for french dips and other sands, make the au jus only from the pan drippings and trim.
Nothing better. It tastes like MEAT, not brown salt water.
 
Medium rare roast beef on a toasted Amaroso roll with horseradish mayo and plenty of au jus..... that's good eats!
