My mother used to make open-faced toasted cheese sandwiches for us, which were fine with American, but I could never abide the texture of Velveeta. However, my brother loved it. One of my low-carb recipe books actually suggests taking La Tortilla Factory L-C tortillas and making your own chips out of them.
