(Pat T Hat)

Put in some thin (or thick,I like thin) sliced celery. Perks it up and adds a nice crunch to it. Sundancer 7's recipe could been lifted out of mama's cookbook if it had celery(oh, and the hard boiled egg slices). Sometimes I'll add a wee bit of brown horsey mustard or just a dash root by itself. I guess I get a horse hair every now and then!

RE: German potato salad? (NebGuy)

8 medium russet or red potaotes (depending on personal preference)
4 oz. bacon
1 medium onion finely diced
1/2 cup cider vinegar
1-1/2 Tbsp. sugar
ground black pepper to taste

Peel potatoes and cook in salted water until tender. Drain and then dice in 1/2" cubes or 1/4" slices (again this is just personal preference).
Fry the bacon and remove and drain. Saute onion in the bacon grease until golden. Combine the vinegar, sugar, and pepper and add to the onion and bring to a boil. Add the potatoes and bacon and gently stir. Cover and cook until the potatoes are hot. Serve at once.

Leftovers are good eaten cold the next day if you have any.

RE: German potato salad?
