He was kind enough to share his venison with us and we always enjoyed it. The dirty little secret was that he shot nothing but deer that had spent the Summer and Fall fattening up on field and sweet corn and apples and other goodies begrudginly provided by local farmers and gardeners, and that he had carefully staked out throughout the off season - he knew every deer he shot by its first name!

RE: The Roadfooder's Creed (Michael Hoffman)

quote:

Maybe this merits a fresh topic elsewhere, but I think we've stumbled on The Problem With Game....

Food Truths:

1) Fat is flavor.

2) Game is, for the most part, exceptionally lean.

If you agree on 1 and 2, it must follow that game is going to be dry and flavorless in its natural state, and it must have things done to it (larding, barding, basting, marinating, poaching in butter) to make it worth the bother.

Eric, Who Loves The Gamey Taste, But Can't Abide Dry

With very few exceptions (Genoa salami, prociutto, lobsters, etc.) I eat nothing but game meat and gamefish that I have hunted and caught.

Unless I overcook something I never have dry or flavorless meat.

RE: The Roadfooder's Creed (Michael Hoffman)

quote:

I found the coolest Columbia Sportswear long-sleeved t-shirt a few weeks ago:

"Become one with nature; then marinate and grill it".

Eric, Who Is A Member of PETA (People Eating Tasty Animals)

I belong to the same branch of PETA.
