Forunately I had Mamaw Smith who has had 87 years experience of country cooking. I took the drippings from the fried ham and mixed coffee with it. Real difficult huh??? Not really but it made a very good sauce with my crescent rolls.

Paul E. I sampled the proscuitto on the way home and it was butter tender and very very tasty.

I cooked some bacon and the unsmoked ham this morning along with crescent rolls, Mamaw Smith's freezer strawberry jelly, orange marmalade, coffee and red eye gravy. What a breakfast.

I can see why major five star restaurants like the Blackberry far and Emeril's use his products. Mr. Benton is certainly a crafdtsman.

Paul E. I have enjoyed several visits to his establishment, making sure we spend some time discussing the advantages each of us have felt in our career choices over the years!! When we head thru the Knoxville area on trips his place and the Mayfield Dairy ice Cream Parlor are on our list of places to stop. We hope to pay him a visit in October this Fall.

RE: Bacon--Benton vs. Broadbent (Earl of Sandwich)

I had a serendipitous visit at Benton's this afternoon. What an amazing "hillbilly operation" as Allen Benton described his place. he's been running it for the past 35 years and he said he regularly ships products to Emeril & Bobby Flay and many others, those being the 2 names I remembered.
I bought a couple pounds of bacon and somne ham slices and also some free range eggs at quite a bargain price.
