The place on the north side of the Bar Harbor, ME green had a great chocolate wasabi ice cream this August.    Then there's the world-famous (or maybe infamous? I ain't tried it and ain't gonna) lobster ice cream at Ben and Bill's about 2 blocks north of that on Main Street. We have held a Mardi Gras party for the last few years and I have participated in the food preparation. &lt;br&gt;  &lt;br&gt; Last year I volunteered to make home made ice cream for the dessert.  Another member of the food committee asked me to make cayenne chocolate ice cream.  My initial reaction was &amp;quot;yeah - sure&amp;quot;. &lt;br&gt;  &lt;br&gt; When she provided me with a recipe for cayenne chocolate cookies I was even more skeptical.  Under closer examination I found the proportions of the ingredients to be very similar to my recipe for basic chocolate ice cream.  It just had cayenne pepper as an ingredient. &lt;br&gt;  &lt;br&gt; After further discussion I suggested that a cajun spice chocolate ice cream would be more acceptable to the group.  So I made a half batch of each for a taste comparison. &lt;br&gt;  &lt;br&gt; We found the cayenne chocolate ice cream to be very interesting.  The coolness of the chocolate ice cream masked the initial taste of the cayenne.  As it melted you started to taste the heat.  It was interesting to feel the cool chocolate ice cream turn into a cayenne heat in your mouth. &lt;br&gt;  &lt;br&gt; The heat was not intense - the coolness and nature of the ice cream kept it in control.
