It is most likely too expensive for serving on a cart. I also know it is not Chicago Relish. I like some heat and alot of people do. It would be considered just above medium. I took alot of the Chicago Dog ingredients. I think it is an excellent Relish. &lt;br&gt;       &lt;br&gt;      1 entire large cucumber skinned, seeded&amp;nbsp;and diced fine  &lt;br&gt;      7 jarred hot cherry peppers diced fine  &lt;br&gt;      5 Vlasic Whole Refrigerator Kosher Dills diced fine  &lt;br&gt;      3 medium jalapeno peppers diced fine (seeds and ribs removed)  &lt;br&gt;      1 medium onion diced fine  &lt;br&gt;      3/4 teaspoon celery salt  &lt;br&gt;      3 tablespoons juice from sport pepper jar  &lt;br&gt;      2 tablespoons juice from pickles  &lt;br&gt;      2 tablespoons juice from cherry peppers  &lt;br&gt;       &lt;br&gt;      Then I mixed it up. It might sound a little wet but the fresh cucumber and onion absorbed most of it and kept it from turning brown.&amp;nbsp;All products were refrigerated prior. Including the fresh Cucumber and Onion. That's all they served; foot long dogs and italian sausages.  They steam the buns and dogs.  My dog was a red color, and since I am not a relish fan, I got relish on the side. Most are some kind of dill pickle relish with and without spices.  Some have onions and peppers added.  Then there's some kind of yellow mustard/relish mixture.  I was disappointed. A few vendors in Chicago served the Green folk some dogs and they paid them with the nuclear waste... It is called Niro's Gyros and it is located at 48th st. and Elliot, easily accessible from I-10.  They also serve a Maxwell St. Polish, which is outstanding (and just as I remember it from school!).  The hotdog has the authentic bright green sweet relish and hot serrano sport peppers, along with the traditional poppy seed bun. WNY has Sahlen hot dogs and Webers relish &amp; mustard. Charcoal broiled is the established method of cooking. Living in Indianapolis now (no good dogs here) lets me get to Chicago and I've tried the Chicago dog and enjoy it just as much as the WNY weiner. I don't believe there is a best but just alot of great dogs and styles of serving them. The Webers picallili is sweet/hot and just the right compliment to the charcoal dog. We've been making it as long as I can remember and it's my relish of choice.  It has zucchini, which is a little softer than the cucumbers in most relishes, bell peppers, onions and spices.
