I'll take mine with the breadcrumbs, please.
I love flounder but, it's hard to get here in Dallas. I grew up eating it in NY.
My mother would pan fry them coated in matzoh meal. I loved them cold the next day. Yummo!

RE: Fish Dinner - lots of big photos (morningglory)

Rubyrose,

What a wonderful dinner. I really like the coleslaw which I tried last night, since I was lucky to have the ingredients on hand. I also like the idea of baking the fish with breadcrumbs, to make them more healthy than fried, my usual preference. I do not know how I missed this thread, when it first came out?

Great meal and pictures.

RE: Fish Dinner - lots of big photos (cd348)

Man oh man. Those pictures are great. And to think that my dinner tonight is frozen chicken patties and frozen fries (dinner jump-up).

RE: Fish Dinner - lots of big photos (SassyGritsAL)

Thanks for the receipe for the coleslaw. I don't eat green peppers so I will leave them out, but it sounds like a great coleslaw. The pan fried potatoes looked great too.

You are on your way to becoming just like JohnA

RE: Fish Dinner - lots of big photos (LuncheoNette)

That dinner looks wonderful. I wish I had it here in Houston so our premier photo expert (Mayor) could educate this old guy. I got the Canon with the image stabilizer due to the advice of Al.

Paul E. I got one of those cheapie Kodak easy share digital cameras two years ago and the more pictures I take, the better they seem to turn out, even though nowhere near a professional level. I think that's why some people post food pictures, both in restaurant reviews and cooking, to inspire others to take photos, go to Roadfood establishments, and enjoy cooking on many different levels.

RE: Fish Dinner - lots of big photos (Sundancer7)

Very nice presentation. You can not beat fish that has been caught the day you eat it. I had enough filets that there were some left over for another meal, but they lacked the "punch" of the ones eaten the day they were caught.

RE: Fish Dinner - lots of big photos (RubyRose)

Sure, ChopChop. The only difference in the one in the picture is that I used red instead of green pepper (green is better) because that’s what I had on hand and the quantities are half of the recipe. It’s good with venison too.

CRANBERRY COLESLAW

5 cups shredded cabbage
1/2 cup almonds, toasted
1 cup dried cranberries
1/2 cup celery, diced
1/4 cup chopped green onions, white and green parts
1/2 cups chopped green bell pepper

Dressing:
1/2 cup mayonnaise
1 tablespoon sweet pickle relish
1 tablespoon honey mustard
1 tablespoon honey
Salt and pepper

Combine cabbage, almonds, cranberries, celery, green onions, and green pepper in a large bowl .

Combine all dressing ingredients, adding salt and pepper to taste, and refrigerate until ready to serve. Pour dressing over slaw just before serving. Stir well.
RE: Fish Dinner - lots of big photos (ChopChop)

Your coleslaw looks different and tasty - will you share your recipe?

RE: Fish Dinner - lots of big photos (Pwingsx)

Sounds good to me, Adjudicator, I like catfish. If you use fish that's been previously frozen, most times it gets too watery and would probably be better fried rather than baked. If you want to try baking it with defrosted frozen fillets, I'd crank the oven up to 400 degrees.

RE: Fish Dinner - lots of big photos (Pwingsx)

Thanks, Ruby. Origin was the Jersey shore and they were very fresh and firm. I am waiting for the upcoming striped bass season as Mr. RubyRose is craving a whole baked striper.

P.S. I bought 4 of the fish plates and a big glass fish shaped serving plate at J.J. Newberry's 5 & 10 store when I was in high school in the 1960's. Had I known how much I would have used them over the years, I would have bought more of them.

RE: Fish Dinner - lots of big photos (HotDogHead)

Excellent post as usual RubyRose!
