It was 1 large potato sent through a spiral slicer and it came out as mostly 1 long piece of potato. They were potatoes mashed with butter, egg yolks, milk or cream and salt &amp; pepper.  Then the egg whites were beaten and folded into the potato mixture.  Blobs of them were shaped into &amp;quot;clouds&amp;quot; and baked.   &lt;br&gt;  &lt;br&gt; I did make a breakfast variation that had ground ham added to the potato/egg white mixture but a reserved whole egg yolk was nestled in the center of the cloud instead of mixed in with the potatoes.  They were baked until the egg yoke set and they had a very fluffy texture.
