I must say that these things are HUGE!  I ate one pork and although the filling was excellent, I was disappointed with the tamale overall as it was very dry.  I froze the rest and haven't tried the cheese ones yet.   &lt;br&gt;  &lt;br&gt; The best tamales I've ever had were from Doris' Hot Tamales in D'iberville, MS.  It's a little stand in the middle of an old neighborhood just over the bridge north of the Imperial Palace Casino.  It's been there for over 50 years and I was thrilled to see they reopened after the storm. Mary who is deceased moved here from Mississippi and brought their recipe with them from the Delta region where tamales are everywhere.  They have been doing tamales in Knoxville for many years and when Mary died a few years back, she left the business to her sister who had been there with her the entire time. &lt;br&gt;  &lt;br&gt; They also serve chili and it is very good so I hear. Several of my students would make money for the family by working these 'booths' on the weekend.  My only experience with Tamales prior to that was with the Hormel canned examples...which set a very LOW standard for judging Tamale Quality.
