you can get both artichokes AND green Olives at Difara, my favorite NYC pizza spot. but at difara, the green olives these days are not cooked, so you really only need 1 slice of them on a pie. then distribute to the rest of the pie. i have also, believe it or not, had artichokes on a pie at Sally's in New Haven- this was not on the menu and a gift/ suprise from Flo. but my favorite pie at Sally's, in the everything type category, is a Red Pie with Tuna, Anchovies, and Mozz- the great servers at Sal's always try and discourage me from the Mozz on this pie, but trust me, it is a snarkalicious treat! the sweet mozz and snarky anchovies balance with the tuna and delicious sauce for pizza perfection!

artichokes can add a lot of moisture to the pizza, so, when I use it on pizza (my wife enjoys that) I remove the leaves from the heart and chop the leaves and do not include any of the heart on the pizza. The heart(s) get eaten while the pizza is cooking.

Actually, one of my favorite pizzas is:
Artichokes
fresh mozzarella
broccoli
tomatoe slices
black olives
parmesan cheese
On of our local pizza places offers this, and after the first bite, I was hooked!

Wow, Last night I made an Artichoke heart and green olive pizza. Light sauce that I make slightly sweeter to offset the strong olive taste. Some cheese, but less then a normal cheese pie. I then chopped the 'Chokes to bite size and sliced the olives up. It was a huge hit with the wife, but the kids didn't like it so they staied with the meatball and black olive.

i love chokes on pizza--but i am NOT a fan of the "Everything" pizza---makes for a soggy crust and hard to eat "out of hand", if you know what i mean---anchovies--chokes--and very thin sliced onion!!
Green and dried black olives with feta is good too!
