It was the first place I had &amp;quot;MUD BUGS&amp;quot; and they were awesome! Labor Day weekend has the annual Chile festival in Hatch, New mexico. That is the region where most of the long red and/or green chiles are grown. During the celebration, they have propane roasters roasting the green chiles. You peel off the blackened skin and  have the greatest tasting chiles. Some growers grow hot ones, some mild, and others in between. The reds are sold in bulk in in long threads called ristras. I like the Sandia variety. they are hot, but not mouth burning.
