I made this &amp;quot;creamy corn&amp;quot; side dish and I put leftovers in some corn muffin mix once.... YUM! My creamy corn is a dump recipe, but I make it in a cast iron skillet over the stove top and it involves heavy cream, salt, pepper, sweet corn, a little bit of cheese, japalenos, poblano peppers, onions, and some butter. I am cooking just for myself, so the big pan version is a bit more than I need. I would recommend throwing roasted serranos in there, rather than pickled jalapenos. The jalapenos vary a lot by brand, but if you roast your own serranos, you know what you can expect. I never thought about cottage cheese in there... What about ricotta? That might be good. You could do an Italian corn bread muffin. Ricotta, chopped salami, a little pepperoncini (chopped pretty finely), maybe some cracked red pepper (like for pizza), and some Italian cheese baked on top.  &lt;br&gt; Uh, on the Hot Dog Forum, I asked about using Jiffy Corn Muffin mix for Corn Dogs...
