(essvee)</title><description> Pepper and egg was more common where I grew up. Well-fried (not crunchy) peppers in a lot of olive oil and a little garlic. Scrambled eggs on top of that. &lt;br&gt;  &lt;br&gt; I just now figured out why already scrambled eggs were added. It's because if you add raw eggs to a bunch of vegetables in the skillet they don't scramble up all curdy and nice. (leethebard)</title><description> Here's a sandwich I grew up with...is healthier than many..and delicious. &lt;br&gt;   My grandmother fried up some fresh spinach in olive oil and a little garlic and salt...and then added scrambled eggs to the skillet. Perhaps add a little Romano or Parm. cheese...mix well..and put on a hunk of crispy Italian bread or crispy hard roll! &lt;br&gt;   It is a great meatless meal too....Italian pizza and some sub shops in the North East make it.
